I used to make this apple kale juice all the time when I first got my Blendtec. It's very tangy and refreshing. I hear a lot of people say they don't like these types of "whole juices" because of the texture. I actually really enjoy the texture. It reminds me of the pulp in orange juice. I also like a lot of really strange foods so don't mind me...
As I said, I made this with a Blendtec but I'm sure a Vitamix or even one of those scary looking Ninja Blenders would probably work. I really don't know about a standard blender. I would maybe put everything in a food processor before adding it to a standard blender.
Do you remember when kale used to be a just a garnish at barbecue places and other restaurants? I had no idea what I was missing out on. The kale always got taken home to our pet bunny. (Lucky bunny.) Now this "garnish" has become a regular part of my diet in salads, juices, chips, and other foods I can't think of right now. Anyways, I love the dark green color it gives this juice. It puts my green apple to shame.
Recipe

Green Apple Kale Juice
Prep Time: 5 mins
Total Time: 5 mins
Yield: 1-2 servings 1x
Ingredients
- ¾ C water
- 1 green apple, cored and sliced
- 2 stalks of kale, torn
- 1 Tbsp pure lemon juice (or juice from ½ lemon)
- ¼-½ teaspoon ground ginger
- 3 ice cubes
Instructions
- Pour ¾ C water into your blender. Add lemon juice and ginger then add apple, kale, and ice in that order.
- If using a Blendtec, use the “whole juice” selection. Otherwise, blend until smooth.
- Serve over ice.
Notes
I realize I had you add ice and then serve it over more ice. The friction from the blender tends to make the juice really warm up so the blended ice helps keep the temperature down while adding just the right amount of liquid.
I drink something like this 3 or 4 times a week. Good carbs early in the am is fine. Just not late at nite...
