This was exactly what I needed today. Something about the nice weather makes me crave flavor combinations like this one. You can make this with either full fat kefir or coconut milk - they both make great chia seed puddings.
Lately I've been making chia protein puddings for after workouts. It's easy. Just coconut milk or kefir mixed with a scoop of your flavored protein powder and chia seeds. Then you just refrigerate it until it sets.
This has nothing to do with the recipe but has anybody tried no poo or oil cleansing? I started both a week ago and wow! I really didn't expect to see a huge difference because I didn't think I had any problems with my hair or skin. Just one week in and my hair already sets nicer and does what my hair straightener tells it to do. I have very coarse, thick hair and it doesn't even feel like my own anymore. Crazy! With the oil cleansing my skin tone has improved, I no longer have redness under my eyes, and my skin doesn't look shiny towards the end of the work day. If this is something you have thought about trying, I definitely recommend it!

Description
An easy to make chia seed pudding with pineapple and mint. Dairy and dairy-free options.
Ingredients
- 1 can full fat coconut milk or 1 ⅔ C full fat kefir
- 1 C crushed pineapple
- 10 large mint leaves, finely chopped
- ¼ C whole chia seeds
Instructions
- Add all ingredients to a blender bottle.
- Shake it like you mean it.
- Pour into individual serving dishes and cover with plastic wrap. Refrigerate until solid and chia seeds have gelled. I recommend overnight.
Notes
No blender bottle? That’s no problem, it’s just not as fun. Simply stir everything together in a bowl and if you use coconut milk, make sure it gets mixed very well.
